Apple, sultana and orange cobbler
Serve with cream, custard or ice cream, a great winter warmer for any occasion.

Zest and juice from 2 juicy oranges
75g / 3 oz light brown Muscovado sugar
50g / 2 oz sultanas
110g / 4 oz butter
110g / 4 oz caster sugar
2 eggs
200g / 7 oz self-raising flour
150 ml / ¼ pint milk
2 large Bramley apples
Heat the oven to 180 C / gas mark 4.
Peel, quarter, core and slice the apples and place them in a pan with the orange juice, zest, brown sugar and sultanas.
Cook gently until the apple starts to break up and absorb the orange juice. Place this mixture into the bottom of a 3 pint baking dish.
Put the flour into a mixing bowl, cut up the butter and then rub it into the flour until it resembles breadcrumbs.
Add the sugar then work in the egg and milk until the mixture is like a thick batter.
Spoon it over the top of the apple. Bake in the oven for 35-40 minutes until the top is brown and crusty and cooked through.
